Cut the avocados in half lengthways, remove the seed and scoop out some flesh in the middle, creating a ‘bowl’ for salad. Retain shells for serving.
Roughly chop scooped avocado flesh and place in a bowl. Add washed and finely chopped rocket salad.
Cut the grapefruit and orange in half and cut one half into slices and set aside. Clean the other halves of all the skin, cut into small cubes and add to the bowl with rocket. Gently mix together.
Fill the avocado halves with the prepared salad and serve with cut slices of grapefruit and orange.
To retain the nice green colour of the avocado flesh, brush lemon juice over the cleaned avocado halves.
