Even Feruccio Hržić accepted eco-trend on the marvellous island Cres and offers in his picturesque restaurant “Beli”, called after the village some 4,000 years old, simpleflavourful and very healthy traditional food.

Ingredients

  • 1 kg grouper
  • 1 lemon
  • 100 ml olive oil
  • 200 ml white wine
  • 500 ml water
  • 3 garlic, cloves
  • salt
  • pepper
  • bay leaf
  • rosemary
  • 1 kg potatoes
  • 1 tablespoon Vegeta

Preparation

  1. 1.
    Clean and wash the fish, drizzle lemon juice over it and leave it to stand for a half an hour. Than season with salt and pepper.
  2. 2.
    Put the prepared fish into a baking pan or ovenproof dish on small amount of oil together with potatoes chopped in bigger pieces. Bake in a preheated oven at 220°C.
  3. 3.
    In the meantime prepare the topping: in a bowl put olive oil, wine, water, garlic cut in half, pepper, bay leaves, rosemary and Vegeta and all cook shortly.
  4. 4.
    When the fish and potatoes are half baked, cover them with prepared topping. Baking time is approximately 40 minutes.

Serving

Grouper prepared in this way may be served as whole, sliced in filets or portioned.

Advice

If you have a bigger fish, cut it on its front side, spread it and bake like that.

Little secret

The secret of this dish is in a combination of baking and cooking of the fish.
