Sardines in Tomato Sauce

Sardine lovers will be delighted to try them prepared like this, with tomato sauce. The spicy sauce is enriched with two teaspoons of brandy. It can be prepared a day or two in advance and refrigerated.

Ingredients

  • 30 g Hard wheat flour type 400
  • ½ teaspoon ground pepper
  • 500 g small fresh sardines
  • frying oil
  • Sauce:
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 can Pelati tomato
  • 1 teaspoon sugar
  • 1 tablespoon Vegeta
  • 1 teaspoon chopped basil
  • 2 tablespoons brandy

Preparation

  1. 1.
    To make the sauce put finely chopped garlic into warm olive oil. Add pelati tomatoes, sugar, Vegeta and simmer uncovered for about 10 minutes.

    When almost done stir in basil and brandy, and simmer for another 2 minutes.
  3. 3.
    Combine flour and pepper on a plate. Roll cleaned and dried sardines in flour and fry in heated oil on both sides for about 2 minutes.

    Place fried sardines on paper towel.

Serving

Serve topped with tomato sauce.

Advice

Tomato sauce can be prepared a day earlier and refrigerated.
